Chocolate Cobbler Recipe from Sandlake Country Inn

Sandlake Country Inn's Chocolate Cobbler

I know, I know...it sounds strange, doesn't it? It even LOOKS strange! But my, oh my, is it delicious! 

This is one of my most requested recipes at Sandlake Country Inn. At breakfast, we deliver a 4 course hot breakfast to your door each morning of your stay. Breakfast changes every day. I use this chocolate cobbler as our fruit dish. I know we'd love to think chocolate is a fruit, but for those who disagree, you'll be happy to know that I serve this with berries on top and a tiny bit of whipped cream. Now that's a fruit course in my dictionary!

Every time I make it, guests ask if I'll give up the secret recipe. Well, here it is:


CHOCOLATE COBBLER AT SANDLAKE COUNTRY INN
2 sticks butter
1 1/4 cups sugar
1 1/2 cups flour
1/4 teaspoon salt
1 3/4 teaspoons baking powder
1 teaspoon vanilla
3/4 cup milk
1 cup sugar
6 tablespoons unsweetened cocoa powder
2 cups boiling water

Preheat oven to 350. In a 9x13 glass baking dish, melt the two sticks of butter in the oven. 


Meanwhile in a bowl, mix together the 1 1/4 cups of sugar, flour, baking powder, vanilla and milk. Once the butter is melted pour the batter over the butter, but do not stir. 

In a separate bowl mix together the cocoa and remaining sugar. 

Sprinkle cocoa/sugar mixture on top of batter. Do not stir. 

Pour the 2 cups of boiling water on top of that (don't stir)  

bake for 30-45 minutes. I bake mine until I have a nice golden brown crust and inside is pudding-like. In my oven this usually take about 35 minutes. 

Serve warm with sliced strawberries & a dollop of cream.
