Zucchini Fritters Recipe From Sandlake Country Inn

Sandlake Country Inn Zucchini Fritters

At Sandlake Country Inn, we do breakfast a little different than most B&Bs. We deliver your 4 course hot breakfast and your choice of beverages right to your door in the morning! I'm always experimenting with new recipes to surprise our guests and so today, after trying numerous recipes and putting my own twist on it is our Zucchini Fritters. 

These fritters are just one course of our 4 course breakfast. Also included on your breakfast tray or your breakfast basket is a fruit course, hot entree and a pastry item. Our breakfasts are "cooks choice" (that means me!) but if you have any dietary restrictions or allergies, just let us know and we'll do our very best to work around them.

Zucchini Fritters

1 1/2 pounds zucchini (about 3 medium) grated with the large size on grater
1/2 teaspoon salt, plus more for seasoning
1 large egg
1/4 cup flour
1 cup shredded cheese
3/4 cup panko bread crumbs
3 tablespoons finely chopped chives
1 tablespoon cornstarch
freshly ground black pepper to taste
1/3 cup oil
sour cream for garnish

Place zucchini in a colander set in the sink and toss with 1/2 teaspoon salt. Let stand 20 minutes, then wring zucchini dry in a clean kitchen towel. Place zucchini in a large bowl and gently mix in egg, flour, cheese, panko, chives and cornstarch. Season with salt & pepper.

Heat oil in a large skillet over medium heat. Drop 1/4 cupfuls of zucchini mixture into hot oil, flattening slightly with spatula. Cook until golden and crisp, about 3 minutes per side. Transfer fritter to a paper towel lined plate. If needed, fritters may be kept warm in a 250 degree oven until ready to serve.

Serve with a large dollop of sour cream.
