Yes, the Oregon coast is amazing. It's beautiful, and it's very close by us at Sandlake Country Inn. But it's not always about the beach experience. It's time to take a break from the beach and the many activities the Oregon Coast has to offer and relax!

Vegan, Sugar Free, Egg Free, Dairy Free Maple Peanut Cookies
Especially when traveling, those folks with dietary restrictions can have a difficult time finding delicious foods they can actually enjoy. Here at Sandlake Country Inn, we try to find delicious alternatives that all of our guests can enjoy. Here's one I'd like to share with you!
Here is a great cookie recipe from the lovely Thomas Sheppard Inn in West Virginia, that is dairy free, egg free, and vegan.

Peanut Maple Cookies
1/2 Cup real maple syrup
1/4 Cup canola oil
1/2 Cup chunky peanut butter, natural, no sugar added
1 Cup flour
Preheat oven to 350 degrees.
Mix maple syrup, oil, peanut butter and vanilla in a medium bowl. Add flour and mix until combined well - do not over mix. Drop generous teaspoons of mix onto a greased or parchment lined cookie sheet. Press a fork across the top of the cookie to flatten, both directions.
Bake for 20-23 minutes. Allow to cool for 5 minutes before removing from the cookie sheet.
